Blood Orange Olive Oil Cake

Hope everyone had a lovely weekend! Things are looking very pretty around here, yes? That would be the work of the lovely, very talented Danielle Moss, of Breakfast at Toast and The Everygirl. She patiently worked with me to create a look that represents my aesthetic and makes me so happy everytime I look at it (which I cannot stop doing!) I couldn’t be more grateful to her and excited for the new look! Now on to something yummy…

The other day I made Blood Orange Olive Oil cake from one of my favorite cookbooks, Melissa Clark’s In the Kitchen with A Good Appetite (named after her two New York Times Dining section columns). What I love about this cake is that it’s not too sweet. It barely even seemed like cake to me. It’s more like a really moist, delicious bread-perfect for dessert or breakfast (though I’ve been known to eat cake for breakfast, so that doesn’t really say much). The blood orange zest and juice add a perfect tart sweetness. You can certainly substitute regular oranges, but the blood oranges really bring it up a notch with their gorgeous color and delicious flavor.

Here’s the full recipe. Make this cake! It was easy and seriously delicious, and I didn’t even feel guilty eating it. It has fruit in it, and olive oil is good for you. That’s my story and I’m stickin to it.
