Light Fare

I actually made something healthy the other day! So proud of myself. I put together Escarole and Orzo Soup with Meatballs from smittenkitchen.com, and it came out really well! Very warm and comforting, and I LOVE meatballs-these were made with turkey meat too-healthy! Orzo was something I never tried, and it turned out to be really good-like little rice shaped pasta. Only thing I might change next time is to go with a different green-escarole was a bit bitter for my tastes. Perhaps swiss chard or spinach!
