Vanilla Almond Biscotti

Recently I realized it had been forever since the one and only time I made biscotti. I remembered them being pretty delicious (if only I could remember the recipe I used!), so I decided to give it another go with a recipe from Elephantine.

Above, you can see the dough raw, then after the first bake (BI-scotti=twice baked). After the first bake, you cut it into pieces (as seen below), lay them on their sides, and bake again until they’re nice and crunchy.

These aren’t overly dessert-y, so feel free to increase the sugar if you’re looking for a sweeter treat. I was okay with them being a little less sweet, because that helped to assuage my guilt about eating them for breakfast.  
Vanilla Almond Biscotti
Recipe adapted slightly from Elephantine

1 1/8 cup all-purpose flour
1/2 cup maple sugar
1 teaspoon baking powder
a pinch of salt
1 teaspoon orange zest
1/4 cup chopped almonds
2 room temperature eggs, beaten
1/2 tablespoon coconut oil
1 teaspoon vanilla extract

Preheat oven to 350. Mix together the flour, sugar, baking powder, salt, orange zest, and almonds. In a separate bowl, mix together eggs, oil, and vanilla extract. Pour the wet ingredients into the dry and mix well with a wooden spoon or clean hands. Dump the mixed dough onto a baking sheet and form into a rectangle, 3/4 of an inch thick. Bake for 20 minutes.

Remove from oven and let cool slightly. Cut into 1/2 inch pieces and rearrange, on their sides, on the baking sheet. Put back in oven and cook for another 15-20 minutes, turning cookies over about halfway through. When they’re done, they should be crunchy, crispy (like biscotti!). Make sure you take them out before they feel completely hard though, because they will continue cooking/hardening for a little while after you remove them from the oven.

  7. Hah, no, it's not bad! But if you are going to try, don't try those ones that are in plastic wrap at the deli or grocery store-so not yummy. Homemade ones are on a whole different level!

  11. I don't think they need to be refrigerated. I stored them in a Tupperware container on the counter. As for how long they would last, I imagine a week or two-sadly I can't really say, because I ate them all up before they could even think about going bad! Embarrassing but true 🙂
